Monks’ Wit

The Benedictine monks of the Monastery of Christ in the Desert in Abiquiu, New Mexico, USA directly control all aspects of the brewing process of Abbey Beverage Company Ales, of which Monks’ Wit is one.

This throwback to medieval methods is mirrored in the brewing process, which utilizes a mix of spices (coriander, citrus peel, etc.) not unlike the gruit mix used in the Middle Ages in European monasteries, though it does utilize hops as well. The coriander and citrus tones come through strongly on both the nose and tongue, with strong yeast (even some floating in the bottle) with an excellent honey finish. Perfect for keeping up with the post-Vespers repartee.
