A Cajun Two-Step
The Bayou Bock from Covington Brewery (former Heiner Brau Microbrewery in Covington, Louisiana) is billed as “lively as a Cajun two-step,” and indeed this flowery malt can set you to singing “Laissez le bon temps rouler” even if you can’t dance a single step. This dark gold brew, with a nose like those inimitable brackish waters where the swamp meets the salt and a finish like seaweed wrapped around your calves at Port Fourchon, is not easy to resist. About as easy, I suppose, as fiddle music around a campfire.
